When it comes to smoking, you can smoke anything to add a new level of flavor, not just meats. There are a ton of recipes out there but the easiest way to find your favorite is to experiment and see which direction your personal tastes lean toward. As a general rule, if the fruit of the tree pairs well with the dish, so will the smoke.
Techniques
- Only use wood that’s been cut within the last year. After a year the wood begins to lose its flavor and may not have the desired effect.
- Soak your wood chips in hot water to open the wood fibers so they smolder and make lots of smoke, not just burn away.
- Don’t peek! As tempting as it is, smoking is all about patience. Opening the lid to take a peek will release all your hard earned smoke and the flavor that came with it.
